Makes 12 Halloumi Muffins

Ingredients

  • 250g Halloumi grated (an average sized halloumi)
  • 75g Extra virgin olive oil
  • 2 tablespoons of dried mint
  • 200g Plain Flour
  • ½ teaspoon bicarbonate of soda
  • 2 teaspoons baking powder
  • 1 large egg
  • 200ml sour cream

Method

Preheat the oven 200 degrees – 180 fan.  Line a muffin tin with 12 cases.

In a bowl mix together the halloumi, herbs, flour, bicarbonate of soda and baking powder.

Whisk the oil, egg and sour cream together and add to the dry ingredients, ensuring you don’t over stir the batter. The mixture may look a little lumpy, but its ok.

Spoon the mixture into the muffin tins and bake for 12-15 minutes or until a skewer is inserted and comes out clean.

Cool in the tin for 5 mins then remove and cool on a wire rack.

Serve warm and ENJOY!

The halloumi can be between 200g and 250g it won’t make a difference to the recipe.
