Halloumi and Courgette Fritters
INGREDIENTS
1 Halloumi – grated
5 medium size courgettes – grated
6 Spring onions – chopped
1 handful of parsley – chopped
1 heaped tbs Dry Mint
Salt and Pepper to season
Olive oil – for frying
Basic Batter
2 Cups of Self Raising Flour – Sieved
2 Eggs – Beaten
½ cup Milk
METHOD
Sift the flour into a bowl. Make a well in the centre , whisk the milk and beaten eggs in a separate bowl, add the egg mixture to the four. Whisk until smooth.
Using your hands or place in a sieve and squeeze excess moisture from the courgettes. Stir the Halloumi, Courgettes, onions, parsley and mint into the batter.
Heat a clug of olive oil in a frying pan over a medium heat. Place a large tablespoon of the mixture in the pan, cook 4 fritters for around 3 minutes each side or until they are golden brown in colour. Repeat till you have made up all your mixture.
Serve with a yogurt and mint dip and lemon wedges.
